All the best of a loaded baked potato in mashed potatoes
Prep Time - 10 min
Cook Time - 20 min
Total Time - 45 min
Ingredients
5 lbs potatoes, peeled and cut into cubes
4 garlic cloves, minced
4 tsp salt, divided
4 tbsp butter
1 cup reduced fat sour cream
1/4 cup non-fat milk
1 tbsp. pepper
3 oz bacon, cooked & crumbled
1/4 cup shredded cheddar cheese
Instructions
1.Fill a large stockpot with water and add in chopped potatoes, minced garlic and 2 tsp salt & cover with a lid
2.Bring water & potatoes to a boil and then reduce to a rolling simmer
3.Let cook until potatoes are fork tender, about 15-20 minutes
4.Drain potatoes through a colander and return potatoes to the stockpot and return to stove and let excess water cook off for 3-4 minutes until potatoes are very dry
5.Pour potatoes into the bowl of an electric mixer, or you can use a hand mixer, with a whisk attachment and whip the potatoes for 2-3 minutes until potatoes are smooth
6.While potatoes are being whipped, heat butter, sour cream, milk & pepper in a microwave safe dish until butter is melted, stirring to combine everything
7.Scrape down the side and add in sour cream mixture
8.Whip potatoes until smooth and sour cream is mixed in
9.Add in crumbled bacon and cheese and mix until just combined
10.Taste and add in salt or pepper as needed
11.Put in serving dish and ENJOY!!
